Refreshing High Protein Salad
Do you love eating a refreshing salad on a beautiful spring day? I sure do! Not only will this salad reduce your appetite and cravings for a late night snack, but the delicious blend of flavors will make you want to eat this salad all of the time. I like to pack this salad in my husband’s lunch to give him the proper energy he needs for a long day at work.
Ingredients:
- 2 slices bacon, chopped
- 2 ounces cooked chicken
- 1/2 avocado, chopped
- 1/3 cup fresh blueberries
- 1 cup iceburg lettuce
- 2 Tbsp. almonds, chopped or sliced
- Fresh lemon juice
Tip: Cook bacon beforehand and purchase a rotisserie chicken to make preparing salad quicker and easier.
Instructions:
- Combine bacon, chicken, acovado, blueberries, and lettuce. Top with almonds and freshly squeezed lemon
- Enjoy!
